VINIFICATION. WILD YEAST FERMENT, PIED DE CUVE PREPARED WITH 10% OF THE TOTALE VOLUME 2 DAYS EARLIER. THE REMAINING GRAPES WERE DESTEMMED, SOFT PRESSED & COLD SETTLED. FERMENTED IN STAINLESS STEEL TANKS, TEMPERATURE CONTROLLED BETWEEN 17 – 19 °C

AGEING. IN STAINLESS STEEL, SUR LIE FOR AROUND 9 MONTHS, WITH REGULAR LEES STIRRING
